• 3 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 1 cup chopped roasted peanuts
  • 1 cup saltine cracker crumbs


Beat egg whites until stiff. Mix in sugar, baking powder, and vanilla. Fold in peanuts and cracker crumbs. Pour into a greased 9-inch pie plate. Bake in a preheated 350 degree F oven for 30 minutes. Allow to cool before serving. Cut in wedges and serve with ice cream, pudding, or chocolate fudge sauce. Makes 6 servings.
