Mississippi Mud Cake

  • 1 cup butter or margarine (2 sticks)
  • 2 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa
  • 1-1/2 cup all-purpose flour
  • 1/8 teaspoon salt (omit if peanuts are salted)
  • 1-1/2 cup chopped peanuts
  • 2 cup miniature marshmallows

In a large bowl, cream butter and sugar, beat until light and fluffy. Add eggs one at a time beating well atfer each addition. Stir in vanilla. In a separate container, combine cocoa, flour, salt, and peanuts. Add gradually (but quickly) to butter-sugar-egg mixture. Spoon batter into a greased 13x9x2 inch pan. Bake in a preheated 350 F. oven for 35 to 40 minutes (or until cake tester comes out clesn). Spread marshmallows over warm cake. Makes 36 servings.
