Ingredients:

  • 3 lb pork tenderloin-cut in 1/2 inch cubes
  • 3/4 teaspoon liquid smoke
  • 1/4 teaspoon black pepper
  • 1 teaspoon coriander
  • 1 tablespoon cumin
  • 1 tablespoon instant minced onion
  • 1 teaspoon monosodium glutamate
  • 1/2 teaspoon ginger
  • 1/4 cup peanut oil
  • 1 tablespoon brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup lemon juice
  • 4 cup cooked rice
  •  peanut gravy

Directions:

Place meat cubes in glass or plastic container. Combine remaining ingredients and pour over meat. Cover and allow to marinate 4 hours or overnight, turning meat occasionally. Put meat on skewers over a pan to catch drippings, broil 6-8" from heat for 15-20 minutes, basting and turning frequently. Serve over rice with peanut gray. Peanut gravy: 5 tablespoons pork drippings (maybe extended with butter) 4 tablespoons creamy peanut butter 2 cups milk In a heavy skillet over low heat combine pork drippings and peanut butter. Gradually stir in milk. Allow to simmer for about five minutes. Stir constantly. Serve over meat.
