Peanut Broccoli Salad

  • 1/4 cup mayonnaise
  • 1 tablespoon oil and vinegar or Italian type dressing
  • 1/2 head raw broccoli, washed and diced (about 2 cups)
  • 1/4 cup pickle relish
  • 1/2 medium onion, diced
  • 1 hard cooked egg, chopped
  •  salt and pepper to taste
  • 1/2 cup chopped roasted peanuts

In a bowl, thin mayonnaise with dressing. Add remaining ingredients, except peanuts. Toss to coat dressing. Add peanuts just prior to serving. Salt and pepper to taste. Makes 6 to 8 servings.
