Broccoli Casserole

  • 2 (10 ounce) packages chopped broccoli
  • 1 (10-3/4 ounce) can cream of mushroom soup
  • 1 cup mayonnaise
  • 3/4 cup chopped roasted peanuts
  • 2 eggs, well beated
  • 1 medium onion, chopped (or 1-1/2 teaspoons dry onion flakes)
  • 1/4 cup butter
  • 2 cup dry bread crumbs
  • 1 tablespoon grated sharp cheddar cheese

Cook broccoli with salt according to package directions; drain. Add soup, mayonnsise and chopped peanuts. Mix well. Add eggs and onions; mix well. Melt butter and pour over bread crumbs. Pour broccoli mixture into greased 1-1/2 or 2 quart casserole dish. Sprinkle with grated cheese and top with buttered bread crumbs. Bake at 350 F. for 30 minutes. Makes 6 to 8 servings.
