Wine Cheese Logs

  • 1 lb sharp cheddar cheese, grated
  • 1 (3-ounce) package cream cheese
  • 1 cup chopped roasted peanuts, divided
  • 1/4 cup sherry wine
  • 2 tablespoon mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper

Allow cheeses to warm to room temperature; combine. Add remaining ingredients, reserving 1/2 cup of the peanuts. Mix until thoroughly blended. For easier workability, allow to chill for about half an hour. Shape into rolls about 1-1/2 inches in diameter; roll in the chopped peanuts; erap in waxed paper and refrigerate for several hours or overnight. Serve with crackers. Makes three half pound logs.
