Did you know that there are more peanut brittle recipes than there are trees in the woods? Wow! We have tried dozens of everyone's favorite brittle and have had great brittle and not so good brittle. But this recipe is by far the best we have ever tasted. Fairly thick but full of air! Crumbly and not hard. Really, really good! Bertie County Peanut Brittle is my second favorite in NC. My first favorite is made by my Mom's neighbor who used Bertie County nuts and the recipe that comes on the bag of raw nuts. Hers' is a tad softer than Bertie County peanut brittle. Also, she uses more peanuts that what the recipe requires.
You guys could kick up your Peanut Brittle a few more notches if you would put extra peanuts in you peanut brittle. Every piece of brittle in that jar, regardless of how small, should have peanuts in it.

FedEx delivered on time, but unbeknownst to us, they left it on the front porch which we seldom use. Sitting in the hot afternoon sun, melted some of the carmel and it went to the bottom of the container. I know this is not your fault, but thought you should know. Otherwise, everything was great.

I had a cousin whose second job was making homemade peanut brittle. I bought packages from her for years to use as Christmas gifts. Unfortunately, she passes away a couple of years ago. I didn't know how I was going to continue giving away peanut brittle at Christmas time. So, I did an online search and found Bertie County Peanuts. I tried it one year and was so impressed that I have continued purchasing each year since. The best I have ever tasted. And I have eaten a lot of brittle! Homemade and store purchased. I judge brittle by the amount of peanuts in each bite. And yours is by far the most peanuts and the best of a sweet/salty combination.
